DEAR EDITOR,
A bit of trivia and some light relief. For a few years now I have been wondering about the curious description on sachets of brown sugar found on cruise ship tables, ie “Demerara sugar… Produce of Mauritius.”
I received the answer a few days ago, while watching a TV cookery programme.
The chef explained to one of the guests that Demerara sugar was white sugar dyed brown! This, to me, is a description unworthy of our fine product. Why not describe it as what it really is – ‘brown sugar’?
Genuine Demerara sugar, as produced in Guyana, has a richer, deeper flavour and one does not need to use as much of it as with the ‘copies’. It even looks different.
Is it too late to reclaim our product? It’s a matter of pride.
